Mise en place.

Mise en place is an important touchstone in the catering business. It essentially means - having things ready. All the preparation is done and is now ready to go. When an order comes into the kitchen from a waiter - you cannot start peeling the potatoes, or getting the fish unprepared from the fridge. It’s too late for that. So preparation is key to a good successful and functioning kitchen. The Australian political strategist Sir Lynton Crosby, had a very good expression - “you cannot fatten a pig on market”. In other words - all the necessary work must happen before polling day. Pounding the street and knocking on doors, pamphlets sent out, the picking of candidates, the political manifesto is ready, the goals for government are set - leadership is the sine qua non for a government to change the political weather. However  Mise en place is the key.
